Time to veg out; healthy, easy recipes for hot weather

We always love with Deborah Enos stops by with healthy recipes to keep us on track.  Today she created three yummy treats that are great on a hot day.

CAULIFLOWER RICE:

This is one of the hottest trends in food-faux carbs. Let’s face it, carbs are super convenient and easy to eat anywhere you are. But, cauliflower? That’s a lot more work-but not anymore thanks to Trader Joes’ Cauliflower Rice. Cauli rice is a terrific way to sneak more veggies into every meal. Here’s how I use it:

    When it’s hot, I like having something cold to snack on. Here’s my new favorite & ridiculously low calorie sweet treat:


      I am LOVING this Core Organic Flavored Water. Normally, I’m not a fan of flavored waters because they usually contain lots of sugar or worse, Sucralose. What I like about this drink is it’s organically sweetened and low glycemic, so doesn't impact blood sugar. And, the entire bottle is only 10 calories. You can find this in the Seattle area at QFC, Safeway, Albertson's and Fred Meyer.

      ZOODLES

      I enjoy using Zoodles, aka, zucchini noodles, as a simple way to add more nutrients and fiber to just about any meal.
